What's erased
Every app, all of their scan history, and every active Stripe subscription is cancelled automatically, in that order, so nothing keeps billing after the fact.
An explicit confirmation
Settings → "Danger" zone: you have to type a confirmation word. There's no recovering it once confirmed.
